Cinnamon Raisin Waffles

100% Vegan, Plant Based, Gluten Free and NO added sugars!!

I’m not a huge fan of oatmeal or cold breakfasts so I’ve been inspired to find healthy hot vegan breakfast options!

Here’s one of my new favorites ❤️ Of course these are DELICIOUS with syrup, but to limit the amount of sugar I love to eat these with just a bit of vegan butter or almond butter and banana. The amount of ripe bananas and raisins added to this recipe adds just enough sweetness that no additional sugars are needed! Yum! Let me know what you think!

Serves 6 (about 12 small waffles)

Ingredients:

  • 2 cups Non-Dairy Milk, I prefer unsweetened vanilla flavor
  • 1/2 tsp Vanilla
  • 1/4 cup Almond Butter
  • 4 bananas, ripe with brown spots and never frozen
  • 1/4 cup Flax Seed, ground
  • 1 tsp Cinnamon
  • 1 tsp All-Spice
  • 1/2 tsp Salt
  • 3 cups Oats, divided
  • 1/2 cups Raisins

Directions:

  1. In a large bowl, whisk milk, vanilla and almond butter with a fork. 
  2. Add bananas and mash with fork. Leave some larger pieces.
  3. Add flax and all spices, mix.
  4. In a high speed blender, process 2 cups oats until oats are very small. They will be fine piece but not as smooth as flour. Add to the mix.
  5. Add 1 additional cup to non-blended oats, mix.
  6. Fold in raisins.
  7. Preheat waffle iron.
  8. Spray iron with a little oil and pour about 1/2 cup (or so) onto the iron. 
  9. Cook for 4 minutes and flip for a final minute if needed. 
  10. Serve with nut butter, vegan butter, bananas, berries and/or maple syrup. Enjoy!

Heads up! These do not make great pancakes, only delicious waffles! Stay tuned for a pancake version in the future.
